Maple Ginger Snowman Cookies

Ingredients (make ~5 dozens cookies):
Lapierre Maple Farm
100% Organic Pure Maple Syrup (Grade A Dark Amber)   255g
Olive oil   170g
Brown sugar   159g
Salt   1 teaspoon
Ground ginger   2 teaspoons
Egg (L)   1
Baking powder   1 teaspoon
Baking soda   1/2 teaspoon
All purpose flour   568g

 Instructions:
1. In a mixing bowl, stir in Lapierre 100% organic pure maple syrup, olive oil, brown sugar, salt, ground ginger and egg, mix well.
2. Whisk the baking powder, baking soda into the all purpose flour, and then stir these dry ingredients into the maple mixture to form a dough.
3. Divide the dough in half and wrap well. Refrigerate for 1 hour or longer.
4. Once the doughs have chilled, take one dough out of the refrigerator, and flour a clean work surface and the dough. Roll it out as 0.5 cm thick.
5. Cut out shapes with a snowman cookie cutter or a cookie cutter you desire, cutting them as close to one another as possible to minimize waste. Transfer the cookies to ungreased cookie sheets.
6. Preheat the oven to 350F. Bake the cookies 8 min for soft cookie or 12 min for crisp cookies.
7. Let the cookies cool on the baking sheets for several minutes until they are set. Transfer the cookies to a rack to cool completely. Repeat with the remaining dough.

 Tips:
– an alternative to keep a dough from sticking to the table or rolling pin as you roll is to place the dough on parchment paper, and then put another sheet of parchment or a sheet of plastic wrap over it. This will keep dough from sticking without the need for additional flour.
